Highly awarded chef Alejandro Cancino never set out to become a pioneer of the plant-based cooking scene. And yet – having spent many years building a remarkably successful career as a respected culinary talent, both in Australia and internationally – in July 2018, Alejandro made a bold decision. He stepped away from his secure trajectory to focus on his and his wife Paola’s shared vision of creating a sustainable, plant-based future. Alejandro trained internationally at Mugaritz in Spain, Le Manoir aux Quat’Saisons in England and at Bulgari in Japan. In 2008, he was awarded Young Chef of the Year in the UK, then, in 2013, Best New Talent in Australia, and Chef of the Year in Queensland. Under his leadership, he saw Brisbane’s acclaimed restaurant Urbane grow from a two-hatted to a three-hatted venue – becoming one of only six restaurants in Australia to share this achievement. Now, Alejandro, alongside Paola and his young daughter Lola, is focussed on further transforming the Sunshine Coast into a go-to destination for plant-based cuisine developing delicious recipes for his family business Fënn Foods.

With management experience and a strong drive for excellence, Paola was the perfect partner to take Fenn Foods from an idea to the thriving company it is today. As the COO of Fenn Foods, Paola is involved in all aspects of operations while keeping the next goal in clear sight.

Belinda’s career in London and Australia has been comprised of roles that require exceptional organisational skills and an ease for developing strong working relationships. Having worked at Fenn Foods since its conception in 2018, Belinda’s strong relationships with customers and stakeholders are invaluable.

Marketing Coordinator

Having worked as part of the marketing team for ASX-listed companies as well as small businesses, Emily understands what goes into managing a brand and getting heard in today’s market. Emily has experience managing a range of channels including OOH advertising, print, tv, radio, events and digital for FMCG companies including Maleny Dairies and international plant-based brand, COYO. With a passion for content creation and digital advertising for purpose-driven brands, Emily’s focus is on developing a strong community for Fenn Foods and its retail brand vEEF.

Teo Catarinolo

Warehouse Manager

With a wide range of experience in the food manufacturing and hospitality sector, Teo has a deep understanding of the industry and a passion for food. From his time as Production Manager at QLD based milk brand, Maleny Dairies, Teo has experience dealing with the challenges of processing a commodity with significant variations and a short shelf life. It was during his time working at the community kitchen business unit of IFYS, a not-for-profit organisation that supports people in crisis, that Teo decided he wanted to work for a business that aligned with his values. Having joined Fenn Foods as a production worker, Teo learnt everything about the manufacturing process and grew into the Warehouse Manager role he now holds.

As a trade qualified mechanical/electrical engineering professional with 30+ years’ experience in manufacturing, engineering, plant reliability and management, Scott’s ability to create and maintain a successful, efficient manufacturing environment is second to none. Having specialised in FMCG & food manufacturing including Kraft Foods Ltd, Fonterra Australia and Coca Cola Amatil, Scott brings a wealth of knowledge and experience to the role as well as an ability to build fantastic rapport with his team.

Santiago’s wealth of experience across the globe gives Fenn Foods an international perspective. His palette was developed working as a chef in numerous countries and his keen organisational skills were honed working for the top names in hospitality including Four Seasons, the Sydney Opera House’s Bennelong restaurant and various Michelin starred venues. His passion for food is unrivalled as he continues to drive innovation and excellence in the R&D department.

Mariana Karam

Research and Development Manager

Mariana is a qualified Food Scientist and brings with her 8 years’ experience in the food industry as well as a passion for healthy food. With a focus on Quality Control and Quality Assurance, Mariana ensures Fenn Foods’ reputation for high quality is maintained. As well as her technical duties, Mariana, along with the R&D team, develops new, innovative products that set the standard for the plant-based industry.
